D.I.Y super food bread.....mmmm!

I love bread.

Bread does not love me.

Or maybe it does. Maybe that's why it hugs onto my body in all the wrong places 😒

I was doing my YouTube routine, catching up on all my favs, and Jess the Beautician mentioned super food bread.
Bread that was vegan, that wouldn't bloat me up, that would be soft and filling and healthy and satisfying and easy to make? I thought it was too good to be true. Still gave it a try.
And I'm hooked.
I tweak my recipe from time to time, but it's usually like this:

1c oat flour (blend oats until it's a powder)
2 tbsp both of hemp and chia seeds
A pinch of sugar (I'm using organic coconut sugar cause I'm fancy 😂)
A dash of salt
And about 1/2 c nut blend of your choice.
I also found a massive bag of musseli  (sp?) in my pantry, so I added about a cup or so of that too.
Combine and add like 1/4c water and set aside.
You may want to preheat your oven...350F is good.
Press your (very stiff) dough into a prepared baking receptacle (I used a baking pan lined with baking paper, a cookie sheet will do) and bake for 20 minutes or so. The edges will get nice and golden.
Cut into square(ish) pieces.
I spread some apricot jam on 2 slices.
I hope you give it a try, because it really makes a nice addition to my diet, and I'm sure you'll enjoy it too!
You can also freeze it.....Yay bulk cooking!
