Breakfast.
When I think about breakfast, I think pancakes, toast, oatmeal, some type of sandwich, a smoothie......along those lines.
I do not think about rice.
My husband, on the other hand, does.
We now eat dinner for breakfast, and a breakfast type of.....whatever, for late lunch/ early dinner. We feel fuller, more satisfied and more energized too!
The extra energy is especially handy for tackling our house project.
More about that later....
Here's what we had for breakfast this morning:
Curried callaloo and sweet potatoes with veggie rice and steamed plantains.
Yum!
Callaloo is our most popular local greens here in Grenada. I love it and add it to damn near everything.
I kid you not, I've made callaloo ice cream 😐
You can sub kale, collards, mustard greens, even spinach (yuck!)
So I peeled, chopped and washed about 3 or 4 small Japanese sweet potatoes (makes up 98% of the sweet potatoes grown here)
Add the potatoes and a handful of chopped callaloo/ greens you have to a pot with about a cup of water, 1/2 c coconut milk, 1/2 tsp of turmeric and salt and pepper to taste. Let that cook til the potatoes are done. And we want enough liquid in the pot as gravy, ok? So don't let it get too dry, or burn 🙄
Hopefully, you would have already started on your rice. I added about a cup and a half of rice (whatever type you prefer) to boiling water and threw in a handful of frozen peas and carrots, a dash of coconut milk and seasoned to taste.
I know I said steamed plantains, but I really just boiled it. A nice firm one, cut into thick slices. Boil (or steam) til you can poke it through with a fork.
Plate it up and serve.
I know it sounds like a lot to do, but it did only take me about 20 minutes.
