Homemade powdered brown sugar

We bake a lot in my house.

By we, I mean me.

Cookies, cakes, bread, buns, tarts, etc. ...
I'm even dabbling in fruit leather.... somewhat 🙄
I need my batters to get creamy quickly, and my homemade chocolate bars to be smooth and NOT grainy 😑

I think I've found a solution: brown sugar powder.

I used to use icing sugar, but we stopped using white sugar a long time ago.
I don't know why I've never tried this.

I used a mason jar with my Oster blender to keep the powder contained. Worked like a charm.
You can add a dash of starch (cornstarch or arrowroot) to keep the sugar from clumping (like a half tsp starch for every cup of sugar) I used 1 tsp for this entire batch. I want it to be mainly sugar, you know.
It's pretty basic.
Put the sugar in the blender cup.
Add starch if you want.
Cover the jar.
COVER THE BLENDER COVER WITH A KITCHEN TOWEL. POWDER WILL ESCAPE!
Pulse for like 30 seconds. Every few seconds I like to stop and shake the blender cup, just to loosen the contents.

And that's it!
